Lemon & Herb Baked Halibut
You will need:
- 550g Halibut steak - washed and dried
- 1/2 cup white wine of your choice;
- 1 small bunch coriander - chopped finely;
- 1/2 tsp fennel seeds;
- 1 heaped tbsp crushed garlic;
- 1 1/2 tbsp olive oil;
- Salt & Pepper to taste;
- Paprika;
- 2 tbsp lemon juice;
- Butter;
- Seasoned breadcrumbs;
La methode:
- Butter a shallow baking pan;
- Salt, pepper and paprika both sides of the Halibut steak, and allow it to marinate for at least 1 hour;
- Mix together the white wine, garlic, olive oil, chopped coriander and fennel seeds, set aside;
- Pre-heat oven for 375 F on "Broil";
- Pour wine marinade over fish, cover with foil and bake in oven for 10-15mins or until fish flakes easily when poked with a fork;
- Remove fish from oven, sprinkle with breadcrumbs and bits of butter;
- Turn oven temperature to 420 F;
- Return fish, uncovered, to oven for a minute or so to melt the butter and to brown the breadcrumbs;
- Serve accompanied with the wine marinade remaining in the pan and starch of your choice.
Ooh mi gosh, it looks so yummy! Do you have Old Bay Seasoning in Hockeyland? It's a Maryland thing but I swear it makes your fish and seafood taste a whole lot better!
ReplyDeleteOoh! That looks good! I've never thought of using lemon and herb on fish. When it comes to fish, I usually just use salt/pepper and pan-fry. I hate frying fish..ugh, the oil splatters. I used to do cheat my way in college by marinating salmon beforehand with bottled teriyaki or lemon-pepper sauce from Lawry's and then bake it.

It's hard to cook a decent meal when I get home from work (6pm) and only have 3 hours before I head to bed again. I do love being a know it all, only because it happens so rarely for me! Lawrence is the know-it-all in the relationship so its nice that I'm able to throw it back in his face every now and then ;) He never believes I'm right though, and always needs to double check for himself. SO MEAN!
